For years this kitchen has run on a morning message to about seventy regulars. It is a good system — it just requires knowing somebody. That is changing. Below is how to order today, and what is coming next.

Before you send

Ask for today’s list
The menu changes every morning. If you’re not sure what to order, say so — you’ll be told what’s in the oven.Two things are almost always on it: the old-fashioned lamb shoulder and the stuffed neck.
Order early
Most of the day’s sixty to a hundred meals are reserved before opening. During Ramadan the kitchen is typically fully booked by 4 p.m.
Give notice for a crowd
Orders for a hundred people are routine here, but they are cooked, not assembled. The more warning, the better it will be.
No tipping
There are no servers, and the chef does not accept tips. Please don’t try.

Catering is a large part of what Old School does — a hundred-person order is an ordinary week here, and during Ramadan the kitchen turns out four to six hundred meals a day.

Quotes come after a conversation, not off a package sheet. Tell him the occasion, the number and the budget, and he will tell you what he would cook.

If you need a knife to cut the meat, you’re getting the food for free.
